Mothership (Fermented Chilli Salt)
After many moons of experimentation, delighted to finally release this tasty seasoning to the wild.
Organically grown, fermented, freeze dried in Lutruwita with @tasman sea salt from up the coast.
Hot but not hot hot. More salty, acidy, funky hot. Perfect as a finishing salt for… grilled fish, roast vegetables, fresh plump tomatoes, fried eggs, roast chickens, Bloody Mary’s… etcetera and so forth. As always no rules.
Ingredients: sea salt, mothership ~ heirloom chillis (16+ varieties), vegetables (daikon, hakurei, tomato, tomatillo, eggplant, cucumber, radish, fennel, garlic scapes), raw apple vinegar, sea salt, water (Kunanyi), herbs (shiso, parsley, tarragon, lovage, laksa leaf, dill, chervil).
