Anyone who knows me knows of my obsession with fermentation vessels - particularly ceramic crocks. Over the past ten years I’ve travelled far and wide learning about different shapes and styles around the world.
After years of research, deliberation, trial and error, I’m incredibly proud to finally release the first batch of Rough Rice crocks to the public.
Hand thrown in Lutruwita these beauties are a collaboration with Isaac from Small Fire. These crocks are a perfect home pickling vessel; ideal for kimchi, sauerkraut, pao tsai and so forth.
These guys are
- 4 litre (a great size to have on your kitchen counter).
- Tall and slender to minimise surface area.
- Straight edge for easy use (no runaway pickles).
- Water mote to release carbon dioxide yet not allow oxygen to enter (amazing ancient technology).
- Include ceramic weights to keep your vegetables submerged under the brine (anaerobic).
