A punchy yet balanced, minerally rich blend of endemic (and now sustainably farmed) Tasmanian bivalves, gastropods and shore cast seaweeds.
Black lip abalone, angasi oysters, smoked mussels, kelp, sea lettuce (+ a little local shiitake, slippery jack + lovage for further umami and complexity).
Great friends with anything seafood (particularly grilled fish or flashed abalone w lashings of butter and a few drops of fermented chilli) or simply sprinkle on steamed rice for a taste of the ocean. But as always, #norules.
